Elle peut se manger crue (en salade) ou cuite (gratin, potage etc.). Ce l\u00e9gume est d\u00e9licieux lorsqu&rsquo;il est r\u00e2p\u00e9 ou coup\u00e9 en d\u00e9s pour la d\u00e9guster en salade. Il faudra alors rajouter une vinaigrette pour donner plus de go\u00fbt. <br>Peu calorique, elle est particuli\u00e8rement riche en eau, en vitamine C, en calcium, en potassium, en magn\u00e9sium et en fibres. Sa racine riche en amidon rappelle la composition d&rsquo;une pomme de terre. Les phytost\u00e9rols pr\u00e9sents dans la <strong>c<\/strong>hayotte peuvent abaisser le taux de lipides. Ces petites graines \u00e0 la saveur d\u00e9licate et \u00e0 la chair tendre sont un v\u00e9ritable tr\u00e9sor nutritionnel. Bien cach\u00e9es entre les \u00e9cales de la pomme de pin, puis prot\u00e9g\u00e9es par une coquille tr\u00e8s dure, elles sont d&rsquo;ailleurs un tr\u00e9sor bien gard\u00e9, ce qui explique leur prix \u00e9lev\u00e9. <br>Ce petit fruit sec fait ainsi partie des cinq ol\u00e9agineux les plus riches en graisses, et donc en calories. La petite graine couleur ivoire contient en effet 65% de lipides, majoritairement mono et poly-insatur\u00e9s, donc cardioprotecteurs. Parmi ces acides gras insatur\u00e9s, on trouve de l&rsquo;acide ol\u00e9ique connue pour sa participation \u00e0 r\u00e9guler le taux de cholest\u00e9rol dans le sang. Ces petites graines sont \u00e9galement tr\u00e8s riches en prot\u00e9ines v\u00e9g\u00e9tales et en fibres, et sont quasiment d\u00e9pourvues de glucides.<br>C\u00f4t\u00e9 min\u00e9raux, c&rsquo;est l&rsquo;abondance!
